Great Gift Idea

Parents, are you looking for a worthy gift for a health-minded friend? Check out Jessica Seinfeld's (yes, that's Jerry's wife) new book Deceptively Delicious - Get Your Kids Eating Good Food from HarperCollins. In the book, Seinfeld reveals various ways in which she manages to get her three children to eat healthy. Her tips include "hiding" unappealing veggies in a sweet dessert, or dividing a meal into courses so a child is not overwhelmed by the food selection. According to the publisher, this has become a best-seller, and Health 4 Kidz think it sounds like a winner.

Recipe of the Week
The following recipe can be found in The Moms’ Guide to Meal Makeovers: Improving the Way Your Family Eats, One Meal at a Time by Janice Newell Bissex, MS, RD and Liz Weiss, MS, RD. The authors are not only registered dieticians, but trained chefs and moms. This is a terrific recipe for a cold winter night. Enjoy!

Meal Makeover Moms' A-Plus Alphabet Soup

INGREDIENTS:

2 cups all-natural chicken broth or vegetable broth
1 1/2 cups water
1 can (8-oz.) tomato sauce
4 oz. dried alphabet pasta (about 3/4 cup)
1 1/2 cups frozen mixed vegetables, thawed
1 can (7 3/4-oz.) chickpeas, drained and rinsed
1/4 cup grated Parmesan cheese, optional


METHOD:

1. Add the broth, water, and tomato sauce to a medium saucepan and stir to combine. Cover and bring to a boil.
2. Add the pasta, vegetables, and chickpeas, and boil gently, uncovered, until the pasta is done, 6 to 8 minutes. Stir occasionally.
3. Serve in individual bowls and top with Parmesan cheese as desired.

Serves 4

Per serving: calories 230, fat 1g (0g saturated fat), protein 10g, carbohydrate 46g, sodium 670mg, fiber 7g

Exercise of the Week
